well, Baron Cohen and his producers did a lot of editing in Borat (and in his shows) too.
the difference between the two though is that in Borat's case they did not actively edited tape to make it appear people were racist or sexist if they otherwise weren't. Big difference between splicing tape to remove certain words to change the context, and what Borat did.
essentially Borat mislead people into feeling comfortable enough to air their own racist or sexist views. They only became embarrassing later on, when it turned out he wasn't from Kazahkstan, and the viewing audience wasn't the citizens of some obscure country they couldn't find on a map, but the people of the United States...
