They put excess dps on whatever you're fighting, and sometimes soak up some damage against some of the harder boss mobs. Usually they end up kneeling down with no life while you do most of the work, but whatever.
If nothing else, use 'em as pack mules to carry your shit around in between trips to town.

All the companions i've been using in this save are similar to my character - heavy armor, high melee damage output, with an emphasis on survivability.
If you were to grab a Thieves Guild or Dark Brotherhood companion, my guess is they move more quietly. Equiping light armor as opposed to the Dragon Armor I'm putting on my people probably plays a factor too
If you do dick around with a thief or assassin companion, lemme know if they're quieter. I'm gonna play a rogue next time through.

I finally got a place at the college of winterhold so I fast travel back and forth and just store my stuff there (gold and dragon stuff). I've found that when you kill a dragon if you take what you can carry then fast travel when you return the dragon is gone so you can't get what you didn't originally take, but if you take it all and then drop it it will still be there when you come back less 1 item.
