It would seem that the workers deported are the ones that won a class action lawsuit against Koch Foods.
It's very possible that Koch had Trump/ICE deport them rather than payout the damages.

Going back to this, I read this same plant had a job fair to fill the positions left vacant by the raid. 25-30 people showed up to fill the 600 vacancies left by the raid. (link) Is this good or bad?

It's just unclear how they hired 600 undocumented workers! Probably just a paperwork error. therefore the biggest actual crime here will go completely unpunished.
maybe, MAYBE, they'll charge Koch Foods, a private company with over $3 BILLION in revenue last year, a couple thousand dollars in fines.
